Here’s the thing: if you want to make that salad, go for it, I love salads! But, my all-time most-loved recipe is a magical creation called the Hot Pink Breakfast Smoothie (HPBS).
And in this delicious smoothie — you won’t even taste them — is a giant raw carrot, and a large chunk of a beet.
I drink this smoothie, every day for 25 years now (not because you HAVE to eat this, and only this, for breakfast, but because I actually LOVE IT and don’t want anything else in the morning!) — and I assume this is why I went from wearing glasses at age 20, to not needing a prescription, at age 55.
(I do confess to eye strain, the last few years, as I work long hours on a computer. I wear blue-light glasses, which aren’t prescription. We just went to NYC and watched four Broadway plays — no glasses needed!)
Thank you, beets and carrots! Full of carotenoid antioxidants — and you won’t even notice the beets and carrots in the smoothie. How many people do you know who start the day off, with a giant raw carrot? It’s so much easier to drink, than to chew.
Further, you can use water kefir grains to “ferment” (or “culture”) coconut water — which is the base of the smoothie. So on top of nurturing your hormone system, and your eyes — you’re also building a healthy gut flora, by just always keeping a batch of fermented coconut water going into your HPBS.
